Summer 2010 Newsletter - ACCT Celebrates its 27th Anniversary
PRESIDENT’S MESSAGE
THANK YOU EVERYONE. We have had a very successful first-half of 2010. Our Program Committee headed up by Lambert Yim and Malcolm Dunn have 6 programs planned. Program advisor Frank Jang has 3. Our 2nd quarter we had an EDS Factory Tour/ARK and our Founders Day Luncheon was a smashing success. We learned about early ACCT history, acknowledged the passing of founder Rose Chang, John Shimizu (Terry’s husband) and Nellie Hee (Gayle’s mother).
PLEASE VOLUNTEER to help at each event. Contact Lambert or Malcolm or Frank to put you on their list. The latter half of 2010, upcoming events include:
DUE TO ECONOMY--lack of manpower--limited donations, ACCT has not resumed our grant programs, community outreach programs or services. It is not just ACCT but virtually all non-profits. ACCT will continue to get our club’s name “out in the community”, express our gratitude and ‘give back to the community”. We will continue to learn from food demonstrations, sample gourmet food and enjoy the company of friends.
2011 ELECTIONs are around the corner. Our next September newsletter will seek Nominations for a new president, new Officers and Directors of ACCT. We seek new leadership with new ideas and vitality. I have served 3 years as your president and have had a ‘blast’. I will continue in other club positions. Members, please STEP UP AND SERVE in any position when asked.

Membership – Don Lee: One of our newest members is from South America: Patricia Chong from LIMA, PERU. Our membership totals are just over 60 memberships with just over 100 members and growing. Every member was mailed and emailed a member directory in April. In the mailed & emailed directory you can find websites of some of our members businesses & books and most are interesting Asian food related. You will find them rather impressive. PAST PROGRAM EVENTS:
EDS FACTORY TOUR and ARK RESTAURANT: April 13 we had 40 attend this event. Thank you to Brian Ho of EDS WRAP AND ROLL for the interesting factory tour. He makes potstickers, sui mai, ha gow and the mini cha sui bows for commercial sale. Following the tour, we had a great dinner at Ark Restaurant. Chef Gordon demonstrated his food carving techniques and his “fresh noodle-pulling”-round, flat and triangular. Lambert Yim and Malcolm Dunn for a great program!!
FOUNDERS DAY LUNCHEON AT CHEF CHU’S in LOS ALTOS: May 16. Great turnout of 100. Fabulous “fit for a king” lunch presented by longtime member Chef Larry Chu. He served us champagne, gave everyone red handbags and signed his newest cookbook, ““Chef Chu’s Celebrating Your Place At Our Table.” From his cookbook, he served us Grilled Glazed Quail on Watercress Salad; Whole Clams with Ginger in Clear Broth; Minced Prawns Lettuce Cup with Pinenuts; Pork Ribs with Spicy Rice Crust in Kabacha Butternut Squash; Silk Road Lamb with Baked Sesame Buns; and an Orange Fruit Cup. We honored 3 that passed away and served ACCT well: Rose Chang, John Shimizu and Nellie Hee. May Mullen, Tane Chan, Gayle Chan give us an insight into the early history and founding of the club, The Association of Chinese Cooking Teachers, and how these three were key members.
GRACE YOUNG BOOKSIGNING EVENT: May 31. At ACCT life member Tane Chan’s home, surrounded by her family and many friends, Grace debut and graciously signed her new cookbook, “Stir-Frying To The Sky’s Edge” This is her third cookbook, a companion to, “Wisdom of a Chinese Kitchen” and “Breath of a Wok”. ACCT wish Grace continued success. Other ACCT members attending include Lambert Yim, Malcolm Dunn, Mae C Woo, Frank Jang, Margaret Mar, Alex Locke, Doris Lum, Linda Anusasananan, Tane Chan, Cynthia Sasaki, Debbie Wong Okabe, Beverly Lee.
EARLY HISTORY OF ACCT: At ACCT Founder’s Day Luncheon, founders May Mullen, only Life Member Tane Chan and first ACCT President told those in attendance, the early history how the founding of The Association of Chinese Cooking Teachers, now abbreviated as, ACCT, developed. Here is their story: in 1983, a group of women took a Gayle Chan Tour of China. On their return flight, Rose Chang had the idea—form a group of cooking teacher and meet and learn about Chinese cooking together, and to get, Gayle Chan to be president. THE INITIAL 5 GROUP included Rose Chang, May Mullen, Gayle Chan, Tane Chan and Terry Shimizu. Their initial meetings were at the Yum-Yum Restaurant on Grant Avenue or The Wok Shop. John Shimizu (Terry’s husband) drove the women, did the heavy lifting and helped. Nellie Hee (Gayle’s mother did background work), but it was Rose Chang who did everything from beginning to end. By word of mouth, within a month later, Shirley Ross (knew Gayle), Gladys Lee (tester at Yan Can Cook) and (another-who knew Gayle) joined. Within 6-weeks, ACCT put an advertisement in the San Francisco Chronicle to seek out new club members. Doris Lum and her daughter Barbara (who became “club mascot”), Hank Quock, Brenda Chinn, Sammie Louie of Riverside Restaurant answered the ad. This core group formed the club that led the group to what it is today.
Thus the passing of longtime member and one of the club founders, Rose Chang on February 6 after a long battle with cancer and a stroke along with the passing of John Shimizu from Parkinson’s and Nellie Hee are significant to this club. ACCT will miss Rose Chang, John Shimizu and Nellie Hee.

Which will help fatigue, irritability, decrease appetite, bone pain, weakness, skin sensitivity. Best take with calcium, iron, manganese, sodium, vitamin B6.

Our Annual Summer Picnic/Potluck, “Under the Moroccan Sky” was a smashing success with 70 attendees. Our overbooked, “Mooncake Workshop and Raw Fish Salad Demo”, had 30 attendees. Everyone had a remarkable time making and sampling their wares!

Make a Difference! It is vital to our club’s continuity that we fill the officer positions for next year, 2009. Please step up and run for office! Elected year runs from January 1 through December 31. Submit your nomination by October 1 and elections will be in November 2008. MEMBERSHIP COMMITTEE REPORT
Our membership is growing by leaps-and-bounds! Our renewal membership forms will be going out soon for 2009. The membership year is from January 1 through December 31. If you join the last months of this year, as a courtesy, we will carry membership over for the next full year. Individual membership is $30 and Family membership for 2 is $50. You can also download an Application-To-Join from our website.

UPCOMING PROGRAMS
PROGRAM COMMITTEE REPORT
On July 13, ACCT had is Annual Summer Picnic Potluck in Portola Valley. Our theme was, “Under the Moroccan Sky”. With the help of Jo Kadis and her former Catering Caravan tents, the Strauss house was transformed into a gorgeous comfortable outdoor oasis. Over 70 attendees, including author William Poy Lee, his mother Poy Jen, were treated to catered foods by Chef Raymond Tang of Aroma Restaurant, tasty homemade dishes, and exotic belly-dancing by Farouche & Troop. Thank you Nancy and Eric Strauss for the acres of space.
In August, Aroma Restaurant in Alameda hosted ACCT's “Mooncake Workshop and Raw Fish Salad Sampling”. The event was a smashing success! This year, 30 attendees made over 120 mooncakes from 5 pounds of flour. (One recipe of 3 cups flour made 24 mooncakes). Thank you Chef Raymond Tang for assisting in the demo and the wonderful 5-course buffet lunch. We sampled and ate until we could eat no more.
We have 3 upcoming ACCT programs that will complete this year’s 25th Anniversary Year of events.
1. On SUNDAY, OCTOBER 26, at CHINA STIX RESTAURANT in Santa Clara, we have ACCT member/guest author Shirley Fong-Torres present her new cookbook. A hands-on demo of how to make 1,000-layer pancakes and double-dumplings, followed by a fabulous dinner planned by Chef Frank Chang.
2. On FRIDAY, NOVEMBER 14, come volunteer and experience CHINESE NEWCOMERS SERVICE Center’s Thanksgiving Community Food Drive in San Francisco’s Chinatown. We donated $500 to help purchase food and necessities, will hang our Chinese banner, also help distribute food to the poor and disadvantaged Chinese families. Contact to sign up.
3. On SUNDAY, DECEMBER 7, our annual Holiday Christmas Luncheon is at CHEF CHU’S in Los Gatos. Our guest speakers will be authors Lillian Gong-Guy and columnist Gerrye Wong, who will present their Arcadia Book/CHCP San Jose’s Heinleinville Chinatown, “Chinese in San Jose and the Santa Clara Valley.” Do not miss to come savour the special-designed menu by our ACCT member/Chef Larry Chu who will dazzle ACCT and hands-on food carving.

CONGRATULATIONS ON A HAPPY AND JOYOUS OCCASION – JULY 27, 2008 Longtime ACCT member Shirley Ross wed Mory Kerner in Healdsburg. The happy couple enjoyed an Oceania Cruise honeymoon voyage.

PROGRAM COMMITTEE REPORT
On July 13, ACCT had is Annual Summer Picnic Potluck in Portola Valley. Our theme was, “Under the Moroccan Sky”. With the help of Jo Kadis and her former Catering Caravan tents, the Strauss house was transformed into a gorgeous comfortable outdoor oasis. Over 70 attendees, including author William Poy Lee, his mother Poy Jen, were treated to catered foods by Chef Raymond Tang of Aroma Restaurant, tasty homemade dishes, and exotic belly-dancing by Farouche & Troop. Thank you Nancy and Eric Strauss for the acres of space.
In August, Aroma Restaurant in Alameda hosted ACCT's “Mooncake Workshop and Raw Fish Salad Sampling”. The event was a smashing success! This year, 30 attendees made over 120 mooncakes from 5 pounds of flour. (One recipe of 3 cups flour made 24 mooncakes). Thank you Chef Raymond Tang for assisting in the demo and the wonderful 5-course buffet lunch. We sampled and ate until we could eat no more.
We have 3 upcoming ACCT programs that will complete this year’s 25th Anniversary Year of events.
1. On SUNDAY, OCTOBER 26, at CHINA STIX RESTAURANT in Santa Clara, we have ACCT member/guest author Shirley Fong-Torres present her new cookbook. A hands-on demo of how to make 1,000-layer pancakes and double-dumplings, followed by a fabulous dinner planned by Chef Frank Chang.
2. On FRIDAY, NOVEMBER 14, come volunteer and experience CHINESE NEWCOMERS SERVICE Center’s Thanksgiving Community Food Drive in San Francisco’s Chinatown. We donated $500 to help purchase food and necessities, will hang our Chinese banner, also help distribute food to the poor and disadvantaged Chinese families. Contact to sign up.
3. On SUNDAY, DECEMBER 7, our annual Holiday Christmas Luncheon is at CHEF CHU’S in Los Gatos. Our guest speakers will be authors Lillian Gong-Guy and columnist Gerrye Wong, who will present their Arcadia Book/CHCP San Jose’s Heinleinville Chinatown, “Chinese in San Jose and the Santa Clara Valley.” Do not miss to come savour the special-designed menu by our ACCT member/Chef Larry Chu who will dazzle ACCT and hands-on food carving.

On April 6, “An Evening with Chef Martin Yan” was a sellout. Everyone who attended had a grand time, went home smiling and satisfied they attended a great happening. The Joong Making Workshop on May 10 was over-enrolled with many taking home 5 to 8 joongs. MARK YOUR CALENDAR: JULY 13 for our Annual Summer Picnic/Potluck: “Under the Moroccan Sky” theme. Come and enjoy a day under the sun! We have planned for some great food, entertainment, dancers, and more. Free to all members, children, family and friends. Guests are $10. On April 6, at ABC Restaurant in Foster City, 220 attendees were treated to “An Evening with Chef Martin Yan” along with our club’s Officer Installation ceremony. THANK YOU CHEF MARTIN YAN and his wife, SUSAN for such a memorable evening. Our own ACCT-member, Chef Martin Yan cordially entertained us, shared his DVD about his new culinary school, (CAC) Culinary Arts Center in Shenzhen, China, which offers programs in Chinese/Pan-Asian cooking combined with culinary tours of China. Personable Chef Yan mingled at, every table, and was photographed with everyone. He autographed his latest cookbook, “Martin Yan’s China”; available were his signature knives, cookware, other cookbooks. In attendance were Chefs Khai Dong (Ana Mandara), Larry Chu(Chef Chu’s), Nick Wong(Tommy Toy’s), Raymond Tang(Aroma), Kelly Yao(Sino). Big THANK YOU to our sponsors: Digital Copy, House of Lum, Lucky, WoChong, B&N, Sears, Betty’s Hall, Winnie Lee, Shserwin Louie. Chef Yan generously gave his chopstick-sets to all who did not win a door-prize. Thanks extended to MCs Hank Quock and Doris Lum keeping the program moving. One May 10, the hands-on Joong Workshop had 32 attendees, who eagerly learned and made 5 to 8 joongs per person. Thank you to Dorothy Lum for demonstrating the mold-method and Rose Chang, the hand-method. Thanks to Doris Lum for assembling all the provided ingredients and to both May Mullen and Doris Lum, who prepared the 1,000 bamboo leaves. “Now We Are Cooking” – is our motto for our 25th anniversary year of ACCT. For years the Association of Chinese Cooking Teachers has been generous, friendly and welcoming to all members, their family and friends. We have had two high energy events: the 25th Anniversary Kickoff Dinner at Merlion Restaurant in Cupertino and a super-duper “All You Can Eat Crab and Shrimp Feast”. Upcoming we continue with a special Membership Annual General Meeting on April 6. Our most famous member and longtime club sponsor has been Martin Yan. ACCT will be presenting “An Evening with Chef Martin Yan” and invite all members, families, friends and acquaintances are welcomed to attend. We expect a sold out crowd of 150.

ACCT's CHINESE CHARACTER NAME: SIN EYE SAY
Literal English translation as, Food Art Club. The 3 characters are spoken in Cantonese as, “Sin Eye Say”. Raymond Tang was clearly the Contest Winner. Other entries were from Nancy Lee, Dorothy Lum, Lena Fong and Franklin Choy, Eddie Way, Rose Chang and Verna Lee. Thank you to all those that entered the contest. Raymond Tang defined, the first character, Sin, to mean “politely spoken-to dine, to cook or to eat” The second character, Eye, means “art, cooking” and the third character, Say, means “gathering, community.” If you hear these words, SIN EYE SAY, it refers to our club ACCT in Chinese.

We have had two highly successful events in January and February. More than 115 members, their family and friends attended the 25th Anniversary Kickoff Dinner at Merlion Restaurant in Cupertino. Hosted by the gracious owners William and Tina Chan with Chef Henry Lau, an excellent Singaporean buffet, many giveaway door prizes and wonderful ambiance surrounding was enjoyed by all. Two superb demos by Chef Lau of Banana Blossom Salad and Winter Delight Ice Dessert. At Aroma Restaurant, a jammed packed crowd of hearty eaters attended the event. Chef Raymond Tang demo of Hot Onion Pancake (see recipe) and Potato Frosting, followed by the “All You Can Eat Crab and Shrimp Feast” in 3-styles of crab and shrimp: garlic crab, curry crab, cold steamed crab and butter garlic shrimp.

2 part all purpose flour e.g. 2 lbs 1 part corn masa (tamale) mix e.g. 1 lb 1/2 Cup chopped shittake mushrooms 1/2 Cup chopped green onion 1/2 Cup chopped cilantro 1/2 oz salt 1/2 oz coriander 1 cube crushed chicken bouillion Mix all ingredients. In a hot pan with 1 tsp hot oil, flatten 1 Cup mix into pan and fry both sides until browned. Serve hot.

Please extend to your friends and acquaintances to come join our club in future events. Our membership year is from January 1 through December 31.
